Note that a quarter is not a fore quarter or hind quarter, but rather half of a half.
The final price is $4.25 per lb based on the hot carcass weight. A typical carcass is 700 lb and yields about 60% of that weight in meat, but this can vary significantly from carcass to carcass.
A $100 deposit is charged when ordered, but is credited toward the final cost.
Whole beef orders and half beef orders can be fully customized, although for beef over 30 months old (typically October - December), the loin must be de-boned, so instead of T-bones and Porterhouse steaks, customers will receive New York steaks and Filet Mignon. Quarters cannot be customized.
All steaks and roasts are vacuum sealed.
