Order quarter beef
A "quarter" at Wolf Pack Meats is not a fore quarter or hind quarter, but is half of a half. That is, we cut the entire half and put half of each type of cut into each "quarter."
This gives the customer a good mix of cuts from throughout the carcass.
Since there is only one tri-tip and one flank steak on each half of beef, one "quarter" gets the tri-tip, while the other "quarter" gets the flank steak, inside skirt steak, and outside skirt steak.
Quarters will contain the following cuts:
- Brisket
- 7-Bone Chuck Roast
- Cross Rib Roast
- English Style Short Ribs
- Bone-in Rib Steaks (ribeyes)
- Soup Shanks (Osso Bucco)
- Soup Bones
- T-Bone Steaks
- Porterhouse Steaks
- Top Sirloin Steaks
- Sirloin Tip Roast
- London Broil
- Eye of Round Roast
- Rump Roast
- Tri-Tip OR Flank & Skirt Steaks
- Ground Beef
