Order quarter beef

A "quarter" at Wolf Pack Meats is not a fore quarter or hind quarter, but is half of a half.  That is, we cut the entire half and put half of each type of cut into each "quarter."  

This gives the customer a good mix of cuts from throughout the carcass.

Since there is only one tri-tip and one flank steak on each half of beef, one "quarter" gets the tri-tip, while the other "quarter" gets the flank steak, inside skirt steak, and outside skirt steak.  

Quarters will contain the following cuts:

  • 7-Bone Chuck Roast
  • Cross Rib Roast
  • English Style Short Ribs
  • Bone-in Rib Steaks (ribeyes)
  • Soup Shanks (Osso Bucco)
  • Soup Bones
  • T-Bone Steaks
  • Porterhouse Steaks
  • Top Sirloin Steaks
  • Sirloin Tip Roast
  • London Broil
  • Eye of Round Roast
  • Rump Roast
  • Tri-Tip OR Flank & Skirt Steaks
  • Ground Beef
